Barrie Lynn " The Cheese Impresario " review of Fotinos Brothers Winery 2006 Pinot Noir
I loved the elegance of the wine beginning with the stone fruit and berries on the Snozz. In the mouth, I just loved it’s smooth silkiness of the wine with its hint of oak...just perfectly balanced. The finish is quite long and I say it can handle several bites of cheese as I properly executed The Cheese Impresario’s cheese and wine tasting methodology, The Cheese Highway™.
The Cheese & Food Pairings • A Brie-type cheese Fromage d'Affinois from France was fabulous with this wine. • A Gouda-type cheese from Holland , Beemster Classic was just wonderful. • Roth Kase’s Gran Cru Gruyere and their Roth’s Private Reserve (an American Original) rocked. • Fresh Goat Cheese like Woolwich’s Chevrai was good but really came to life with a dollop of Guava Jelly.
I made the Beef Bourguignon I was already planning and made Scalloped Potatoes with Hook’s 10-Year Cheddar...amazing with this Pinot Noir!
What a delight to bring artisanal cheeses and beautiful wine together in a pairing that sings.
